Matagalpa is coffee. The hills around the town grow most of Nicaragua's best, on farms that run from smallholdings to the German-founded estates up the Jinotega road, and the farm tours here are genuinely about the crop — picking, wet mill, drying patio, cupping table — rather than a gift shop at the end.
The other draw is cloud forest. The reserves above town are cool, wet and full of birds, and the Miraflor protected area northeast towards Estelí is a working landscape rather than a park: coffee, cattle and orchids on farms that take visitors in themselves.
Come between December and February if you can. That is the harvest, when the fincas are at their busiest and the fruit is on the trees.
